Chicken and Prawn Rice Noodles

So I did a story on my instagram with this last weekend and it got so much traction! Been asked for the recipe and i’ve have slighty amended it so here it is - enjoyyy. 

This is enough as a full meal for 3 or as part of a side for 5/6 people. (All dependent on your portions) 

Ingredients List:

  • 125g diced chicken fillet 
  • 125g cooked prawns
  • 2 eggs 
  • 1/2 red bell pepper sliced
  • 1/2 yellow bell pepper sliced 
  • 1/2 green bell pepper sliced 
  • 100g crunchy beansprouts 
  • 225g rice noodles (based on rice noodles that have already been cooked)
  • 50g shredded carrots 
  • 1 small onion sliced 
  • 3 spring onions (green part) 
  • 1 tsp grated ginger 
  • 1 tbsp hot chilli powder (can be amended based on heat preference/tolerance) 
  • 1/2 tsp salt (soy sauce is already quite salty)
  • 1 tbsp sesame seeds 
  • 3 tbsps oyster sauce 
  • 1 tbsp fish sauce 
  • 1 tbsp soy sauce 
  • 1 tbsp oil (oil of choice can be used) 

Method: 

  • Heat the oil in the wok 
  • Let the oil heat up a bit and then add your chilli, salt and grated ginger 
  • Add chicken to the wok and cook, add the prawns and fry together until cook 
  • If you get lots of juice from this then empty the juice in another bowl:

  •  Empty the chicken and prawn onto a side dish for now 
  • To the empty wok, add your bell peppers and onions - stiry fry 
  • Add the beansprouts and shredded carrots - stir fry 
  • Add back your chicken and prawns 
  • Stir fry this all together and then push the mix to one side of the wok as shown below: 

  • Crack your eggs into the empty side of the wok and use your spatula to cook it 
  • Once the egg has cooked, incorporate the stir fried mix and the egg together 

  • Empty this mix out onto a side dish for now
  • In the empty wok, pour in your oyster sauce, fish sauce and soy sauce, mix together 
  • Add in your rice noodles and stir fry 
  • Add your stir fry chicken and prawn mix back in and toss together with the rice noodles 
  • Throw in your spring onions and sesame seeds 
  • Enjoy!!
